February

February - it's either just a really short month or a really busy month (sorry for the lack of posts)!

I have spent much of February with the girls. We have had inspiring dinners, movie days, and a Chinese New Year's celebration. We also started a weekly swim, where we go to the local pool and get our fitness on :) I am so lucky to have so many wonderful women in my life!

Davis has been traveling quite a bit but when he has been in town we have been busy! We wnet to a Valentine's Party hosted by Ali (pictures to come) this past Saturday and we saw the Harlem Globetrotters on Sunday. Last Monday we celebrated Valentine's with happy hour and dinner at Lola's followed by a movie, popcorn, and ice cream on our sofa! It was a wonderful night!

I along with some of the girls have decided to run the Vancouver half marathon (Davis is still in the decision process) on May 1st. If anyone would like to visit and come support/run it with us, do it!

This weekend I will be dancing the night away to Madonna v Lady Gaga with the girls, followed by a day of snowboarding with Dave.

Time flies when you're having fun ;)

Taco Night

This week's girls night was dubbed Taco Night by Ali and I hosted. We had a blast as always! We had steak with peppers and feta tacos, Mexican chicken stew, homemade guacamole and salsa, margaritas, and of course wine (what's a girls night without wine?)

For dessert we had an avocado lime cheesecake that was delicious and super easy...Kristen made it and gave us the recipe so if you are interested here it is...

Avocado Lime Cheesecake

Ingredients

  • 1 1/2 cups cream
  • 3/4 cup white sugar
  • 2 ripe avocados, peeled and pitted
  • 6 ounces cream cheese, softened
  • 1/2 cup fresh lime juice
  • 1 (8 inch) prepared graham cracker crust

Directions

  1. Heat the cream in a small saucepan until small bubbles appear around edges. Remove from heat and stir sugar into the cream until it dissolves. Transfer to a medium bowl, and allow to cool.
  2. Combine the avocado and cream cheese in a food processor and blend until smooth. Add the lime juice and process until smooth, then whisk into the cooled cream mixture.
  3. Pour into the prepared pie crust. Smooth surface with a spatula. Freeze at least 2 hours in freezer before serving.





90's Party

When you run out of holidays to celebrate, what else do you do besides throw a decade party?!? Last week we hosted a 1990's theme party, this included bagel bite, mentos, lunchables, handi-snacks, rice krispie treats, Mike's Hard (which we referred to as Zima), snapple, and last but not least jello shots. We also had a wonderful 90's playlist, thanks to Davis!

The party was so great that I forgot to take any pictures once guest arrived, sorry!

Slacking on the job

I am officially one of those, you know the blogger who never blogs and when he/she does it's all at once.....BUT then again I guess all at once is better than never!

Since Davis doesn't land for about another hour, I will try to catch you up on the major stuff going on around these parts.


I have officially retired my old shoes, yes the ones that probably have 1000 miles on them...BTW that's a lot for a pair of shoes!!
AND I bought these pretty in purple ones and so far I love them...they are super light!
We bought a new mattress. It's a real tempurpedic, our old one was a cheap knock off and already had Davis and Cindy indentations!

It looks like we might also be seeing this whole crew at some point...this is not in stone yet, but I can't wait to show all of you how beautiful Seattle is in the summer :)
