Turkey Day in Seattle

Remember that Thanksgiving.....

This was our quote for this Thanksgiving...don't ask, Dave and I do random things.

So, remember that Thanksgiving:

  • when we took showers in the dark (to commemorate the day because we didn't think there would be another to remember this particular Thanksgiving)
  • when I was so upset with you because Thanksgiving wasn't all about food and family to you
  • when I stuffed myself sooo full that I vomited and you thought it was hilarious because I thought Thanksgiving was all about the FOOD
  • when we ate our turkey and dressing watching the Dark Knight
  • when our dessert consisted of Peanut Butter Chocolate Milkshakes with Marshmallows
  • that you got to play video games all day because I was sick in bed
  • that even though I stuffed myself at lunch and you thought we wouldn't want to eat dinner...I still wanted you to cook Veggie Soup for dinner
  • We planned out our black Friday shopping spree and it consisted of free breakfast at IKEA
Man, what a GREAT Thanksgiving! I love you and I am so thankful that I have you.

I am also thankful for all of my wonderful family back home and all of my friends everywhere! You guys mean the world to me and I missed being able to spend the day with you. Luckily I have a very entertaining husband! :)

S'mores Coffee and Fudge Ice Cream Cake

Ingredients:
  • 16 whole graham crackers (about 8 ounces)
  • 1 cup whole almonds, toasted
  • 3 tablespoons sugar
  • 1/2 cup (1 stick) unsalted butter, melted

  • 1 1/2 quarts coffee ice cream, softened until spreadable
  • Fudge Sauce:
  • 1 cup whipping cream
  • 1/2 cup light corn syrup
  • 10 ounces bittersweet (not unsweetened) or semisweet chocolate, chopped
Preparation Fudge Sauce:
Bring cream and corn syrup to boil in heavy medium saucepan. Remove from heat. Add chocolate and whisk until melted and smooth. Refrigerate until cool but still pourable, stirring occasionally, about 45 minutes.

  • 1 7-ounce jar marshmallow creme
  • 2 cups miniature marshmallows
Preparation Cake:
Preheat oven to 350°F. Finely grind graham crackers, toasted almonds, and 3 tablespoons sugar in processor. Add 1/2 cup melted butter; process mixture until moist crumbs form. Press graham cracker mixture onto bottom and up sides of a 9-inch-diameter springform pan with 2 3/4-inch high sides. Bake crust until edges are golden, about 12 minutes. Cool graham cracker crust completely.

Spread 2 cups softened ice cream in crust. Spoon 3/4 cup cooled Fudge Sauce over. Freeze until sauce is just set, about 10 minutes. Refrigerate or freeze remaining ice cream as necessary to prevent ice cream from melting. Repeat layering with 2 cups ice cream, then 3/4 cup sauce. Freeze until sauce is just set. Spread remaining 2 cups ice cream over. Cover and freeze cake overnight. Refrigerate remaining Fudge Sauce.

Preheat broiler. Warm remaining Fudge Sauce in small saucepan over low heat. Remove from heat. Place cake in pan on baking sheet. Spread marshmallow creme over top of cake. Sprinkle miniature marshmallows over in a single layer. Broil just until marshmallows are deep brown, watching closely to avoid burning, about 1 minute. Run knife between pan sides and cake to loosen. Remove pan sides. Cut cake into wedges. Serve cake immediately with warm Fudge Sauce.


I made this cake with chocolate ice cream instead of Coffee because Davis doesn't like coffee. I also made the cake 2 days in advance without the marshmallow cream of course!

Davis at work

I had to post some pictures of Davis working because he is hilarious. He freezes (because he doesn't move anything but his fingers for hours) and so while working from home he bundles up. It is rare to see him working without a beanie on his head, house shoes, and a sweatshirt.

Also, since we moved to Seattle we had kinda small refrigerators and now we have a HUGE one. We do not know what to do with it so we use it as an extra cabinet (hence the Froot Loops and Apple Jack storage). We are lacking cabinet space in our new place right now so the frig gets extra use....good job Dave!

Davis is 26!?!

Yes, on Monday Davis turned the big 2-6. That is soo old in the mind of a 24 year old! Since he was going to be in Central America on Monday, we celebrated early. We starting celebrating last Monday with stuffed crust Pizza Hut (this is an every year doing because it is his favorite)! Then I had planned a surprise dinner party for him on Friday with our wonderful friends (which he ended up finding out about when he came home early for work and I was making a HUGE pot of chicken chili). It was a great time. We used our supper club which consists of a theatre room, pool table, chef's kitchen, and dining table to host everyone (since we do not have a table in our new place yet). It was a great time sitting around talking. I made my first ever ice cream cake and I must say it was a hit. It was a smores cake (Davis eats all things that have either chocolate, marshmallows, or cheese in them)! After dinner we hit the town and celebrated some more.

Saturday we laid around and played his new (birthday present) video game from his parents. It's a racing game so I actually enjoy playing!

Our New Home

This past weekend we moved into our new home! It is super exciting to be in our condo, but moving stinks. We woke up early Saturday to pick up our Budget truck and then headed back to the apartment to start loading it. After we had it loaded our wonderful married friends came over to help us unload it at our condo. Thanks Sushi and Nisha! It was a long day, but that night we celebrated moving and Halloween at the Gupta's. We always have a blast with our favorite married couple!

Sunday we had a lot of cleaning and shopping to do so again another LONG day! We did find our closet storage solution at the container store on Monday and have most of it installed. The rest of the condo is slowing coming together (and by that, I mean it is getting cleaner.) We still have lots to do such as paint, buy furniture, and decorate (one day it will look awesome!)
